What to expect

You'll depart Sydney early and travel into rolling vineyard country. At the first winery, a staff member walks you through their range and explains the region's soil and climate quirks. Cheese arrives mid-tasting—sharp, soft, aged varieties that actually complement what's in your glass. The second winery repeats the format with different wines. You'll then head to a craft distillery where a tasting room staffer pours gin and vodka, discussing botanicals and production methods.
